Banana muffins

Today I am making some banana muffins for lunch.

My husband actually came up with this recipe and entered it in our state fair a few years ago. He won a red ribbon and it has become our favorite banana muffin recipe!

3 bananas ( I used thawed bananas from the freezer); 1/2 c. honey; 1 1/2 c. flour (whole wheat pastry works well); 2 tsp. baking powder; 1/3 c. melted butter (oil works well); 1/4 tsp. salt. Preheat oven to 375° F. Mash bananas. Add honey and stir together, then add melted butter and stir together. Add flour and stir into mixture, then salt and stir in, then baking powder and stir in. Use a muffin pan lined with baking cups or grease tin. Fill cups 1/2 full and bake for 20 minutes. I also like adding in chocolate chips!

Blessings!
