We have a special Good Friday service and dessert fellowship at church tonight. Everyone was asked to bring a dessert to share. There is always a lot of good things at church fellowships and some of the best recipes can be found in church cookbooks! This morning I made up a blackberry pie to take. It smelled so good as it was baking in the oven. Back in the summer time there was an abundance of blackberries just down the road from us. We went picking often and then prepared the berries for the freezer. It is always so nice to be able to put things away in the freezer for the winter. We still have lots of blackberries left! I had everything on hand for this recipe so pie it is for tonight!
Blackberry Pie
4 cups blackberries
1 cup cane juice crystals or sugar
1/2 cup flour
Dough for 2 crust pie
Prepare dough for bottom crust. Place in pie pan. In large bowl, mix together the blackberries,
cane juice crystals, and flour. Pour into prepared pie plate. Add top crust and trim edges of pastry.
Use knife to make vent holes in top crust. Bake at 375° F. for approximately 1 hour.
