An evening treat

It has been a really busy day! It was my day to be out all morning while Rachel was at her homeschool extension classes. They were taking pictures today, so she was about 40 minutes longer than normal, and therefore the shortened afternoon zipped on by! After a quick dinner, Bill was off to a meeting before the men’s Bible study and the girls and I went out to do some grocery shopping. I so much prefer to take care of things that I need to do outside the house earlier in the day, but this is the way it worked out today. After dinner time I pretty much prefer to be a homebody, but I know that sometimes I must be flexible!

I came home from shopping and made some Toffee Bars. Bill and I have been thoroughly enjoying some time in the evenings watching the old Perry Mason shows that were done back in the 50’s. He suggested watching a show after he came home tonight, so we will have these bars as a little snack. They are a long time favorite ~ very quick to make up, and delicious too! After we make some tea, we can settle in and enjoy some time together.

Toffee Bars

1 cup butter or margarine

1 cup firmly packed brown sugar

1 egg yolk

1 teaspoon vanilla

2 cups flour

1/4 teaspoon salt

chocolate chips

1/2 cup chopped nuts

1. Cream together the butter, brown sugar, egg yolk and vanilla. Blend in the flour and salt.

2. Press the mixture into the bottom of a greased 9 x 13 inch baking pan. Bake in a 350° oven for 25 to 30 minutes or until lightly browned but still soft.

3. Remove from oven and immediately place chocolate on the crust. As soon as the chocolate softens, spread evenly. Sprinkle with nuts.

4. Cut into bars 1 1/2 x 2 inches.
